<< Back Chop an onion about the same size as the beet you are using. Grate the beet, using gloves so your hands don't get stained. Saute the onion for a short time in a little olive oil, then add the grated beets, stir, cover, and steam cook until tender. Cool and refrigerate. Add salt and pepper to taste, and for a difference, mix in some mayonaise.
