Curried Carrot Dip

Blend until smooth:
1 lb carrots, roasted, or steamed until soft
2 cloves garlic
1/2 cup olive oil
2 oz roasted pine nuts or almonds
1 tablespoon favorite curry powder
1 teaspoon cumin seed
3 tablespoons malt vinegar    (My friend Shawn uses malt vinegar because it contributes a rich yeasty flavor)
ample salt and black pepper.
 
(great sandwich filling also.  Or, add more olive oil and use as a pasta sauce.
