Kale with Cinnamon

1 medium onion -- minced
1 teaspoon vegetable oil -- (orig was 1 tbsp)
1 clove garlic -- minced
1/8 teaspoon ground cinnamon
1 pound kale -- finely chopped
1 cup vegetable stock
1 teaspoon red wine vinegar
salt and pepper
chopped fresh chives

Saute the onion in the oil for 5 minutes. Add the garlic and cook for 2 more minutes. Stir in the cinnamon, and add the kale, tossing it to coat with the mixture. add the vegetable stock. Cover and simmer for 15 minutes. Season with vinegar, salt and pepper, and chopped fresh chives.
