Raw Zucchini Salad with Lemon and Basil



4 medium zucchini

3 Tablespoons extra-virgin olive oil

1 Tablespoon   lemon juice


10 large basil leaves (sliced thin)



  1. Slice zucchini paper thin.  Refrigerate until well chilled.
  2. When ready to serve, prepare dressing by whisking olive oil, lemon juice, and salt to taste. 
  3. Add dressing and basil.  Toss.
  4. Serve
