Zucchini Hummus

Makes 2 servings
1 zucchini, peeled and chopped
2 tablespoons raw Tahiti
2 tablespoons fresh lemon juice
1 clove garlic
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon sea salt
1 tablespoon chopped parsley for garnish (optional)
1 pinch of paprika for garnish (optional)
Place all ingredients in a food processor and process until smooth.  Transfer to a bowl and add chopped parsley and a pinch of paprika to the top.  Serve as a dip with the food of your choice.  Make chips out of cabbage for an especially healthy treat!
