Zucchini with Garlic & Tahini

Cook enough favorite pasta for 4. While it’s cooking, sauté or steam 2 medium zucchini or other summer squash and 2 large carrots (or other assortment of vegetables) with 2 cloves minced garlic. Combine 3Tbs. tahini, 2 Tbs. vegetable oil, 3 Tbs. wine, 1 Tbs. lemon juice, 1 tsp.soy sauce and ¼ c. chopped parsley. Add pasta, veggies, and toss well. (Cubed tofu simmered 5 min can also be added.)
